Skillet Yogurt Flatbreads
Soft, puffy flatbreads made from just flour and yogurt, cooked in a dry skillet in minutes.
30 min · Serves 6

Method
Whisk the flour, baking powder and salt together in a bowl.
Add the yogurt and olive oil and mix until a soft dough forms. If it is sticky, knead in a little more flour; if it is dry, add a teaspoon of yogurt.
Knead gently on a floured surface for about 1 minute, until smooth. Cover and rest for 10 minutes.
Divide into six pieces and roll each into a round about 3 mm (1/8 inch) thick.
Heat a dry heavy skillet over medium-high heat. Cook each flatbread for 2 to 3 minutes per side, until puffed with golden-brown spots.
Keep the cooked flatbreads wrapped in a clean towel and serve warm with olive oil, honey or jam.
From the kitchen
Contains milk and wheat (gluten). Do not taste or eat the raw dough: raw flour can carry bacteria that only cooking removes. Thick yogurt such as strained yogurt gives the best dough.
